Vegetable Stew

A very easy and delicious meal.

1 each large onion, carrot, parsnip, pepper: these can be varies as desired

4 oz mushrooms

1-2 sticks celery

1 pt water or vegetable stock

Tin any beans

1 tablespoon each cumin, ginger and coriander

Salt and pepper to taste


As always, fry the onions in plenty of oil, then add the spices, then the stock. Simmer for 5 minutes. Chop all the vegetables into 1/2” cubes and add them and the beans to the span and let cook gently for 20 minutes, tasting it and adding salt and pepper as desired. Then it’s ready. This meal is extra nutritious and tasty served with baked potatoes and a little grated cheese.
