Sprouting Aduki Beans

adukiAduki Beans are delicious soaked, cooked and added to the pot. But to get the most out of these incredible beans you can sprout them. Aduki bean sprouts are rich in vitamins E, C, B and A as well as calcium and iron. They contain all of the essential amino acids aside from tryptophan and make an excellent source of protein.

Once sprouted they are a classic, authentic stirfry ingredient. And they can be minced, mixed with water and strained to make aduki bean juice.

Even better, at this time of year you can try planting a couple and see how they go. With the summer shaping up to be a hot one you might get a crop, though aduki beans are native to hotter climates so don’t be too hard on yourself if you don’t!
